Kona's Gazpacho Recipe
7 regular sized tomatoes (Romas usually) 1 cucumber (mostly peeled) 1 bell pepper 1/3 sweet onion 1 1/2 cup of tomato juice (optional) 2 garlic clove crushed (about a tablespoon) salt + pepper 1 tsp olive oil 1 Tbsp vinegar 1 Tbsp lemon juice some cilantro I was instructed that most of this stuff should be processored separately. Processor tomatoes; put in bowl. Processor cucumber; add to bowl. NOTE: Overly processing raw onion will make it bitter!! Processor pepper, onion, some tomato juice, garlic, salt and pepper, parsley, lemon, oil; add to bowl. Add tomato juice. Add vinegar to taste. Add water to correct thinness. Chill. |
The important thing is to processor the Tomatoes,
Cucumber, and The Rest separately.
Better the next day.
Serve in small bowl with tortilla chips.
