Kona's Gazpacho Recipe 

pic of dip 7 regular sized tomatoes (Romas usually)
1 cucumber (mostly peeled)
1 bell pepper
1/3 sweet onion
1 1/2 cup of tomato juice (optional)
2 garlic clove crushed (about a tablespoon)
salt + pepper
1 tsp olive oil
1 Tbsp vinegar
1 Tbsp lemon juice
some cilantro

I was instructed that most of this stuff should be processored separately.
Processor tomatoes; put in bowl.
Processor cucumber; add to bowl.
NOTE: Overly processing raw onion will make it bitter!!
Processor pepper, onion, some tomato juice,
garlic, salt and pepper, parsley, lemon, oil; 
add to bowl. Add tomato juice. Add vinegar to taste.
Add water to correct thinness. 
Chill. 


The important thing is to processor the Tomatoes, Cucumber, and The Rest separately.
Better the next day. 
Serve in small bowl with tortilla chips.
